Ingredients:
4 skinless, boneless chicken breasts
1 tbsp (15 mL) vegetable oil
1/2 cup (125 mL) Heinz Tomato Ketchup
1/4 cup (50 mL) Heinz Chili Sauce, Chunky with Sweet Peppers
1 can (127 mL) chopped green chilies
1/4 cup (50 mL) chopped green onion
3/4 cup (175 mL) shredded Cheddar cheese
2 tbsp (30 mL) chopped fresh coriander
Preparation:
Preheat oven to 350° F (180° C). Flatten chicken with a mallet until uniform thickness. Heat oil in a large ovenproof skillet set over medium-high heat; brown chicken on both sides.
Stir ketchup with chili sauce, chilies and green onion; spoon over chicken. Transfer skillet to the preheated oven.
Bake for 20 minutes, or until chicken is cooked through. Top with cheese and bake for 5 minutes. Sprinkle with coriander. Makes 4 servings.
Twists:
Twist 1 For a mild version, substitute 1/2 cup (125 mL) finely chopped green pepper for the canned chilies.
Twist 2 For a complete meal, serve with mashed potatoes or cooked rice.
Twist 3 For an economical meal, substitute 8 boneless, skinless chicken thighs for the chicken breasts.
