| Brush chicken with oil and sprinkle, inside and out, with salt and pepper. Grate the zest from the lime and juice. Place one half of the lime in the cavity of each chicken. Truss so that wings and legs are snugly held next to the chicken’s body. |

| Combine the reserved lime juice and zest with ketchup, honey and chili powder. Reserve. Preheat the grill. |

| Thread the chickens onto a rotisserie and preheat the grill according to manufacturer’s instructions. Cook the chicken on rotisserie for 40 minutes. [The burners should be set so that the internal temperature of the barbecue is about 400° F (200° C)]. |

| Brush chickens all over with ketchup mixture. Continue to cook, brushing often, for about 35 minutes longer. Stop the rotisserie so that the chicken is breast side up. Brush with remaining sauce and cook for 5 minutes longer or until juices run clear when chicken is pierced in the inner thigh and breast meat is browned. Rest for 5 minutes before carving. Makes 6 to 8 servings. |

For an oven version, the chickens can be roasted on a foil-lined, rimmed baking sheet in a 350° F (180° C) oven using the same timing. |

For gourmet flair, add either 2 canned, finely chopped chipotle peppers in adobo sauce or 2 tbsp (30 mL) chipotle flavoured hot pepper sauce to basting mixture. Reduce chili powder to 2 tsp (10 mL). |
