Super Smashed Potatoes

onions, peeled and very thickly sliced
1/2 Cups (125 mL)
Heinz Tomato Ketchup
1 Tablespoons (15 mL)
vegetable oil
2 Teaspoons (10 mL)
chili powder
1 Teaspoons (5 mL)
Heinz Worcestershire Sauce
Yukon gold potatoes, peeled and quartered
2 Cups (500 mL)
grated Old Cheddar cheese
1/2 Cups (125 mL)
milk or sour cream
Salt and pepper


Preheat grill to medium and line with perforated, non-stick foil or a grill basket. Toss the onions with the ketchup, vegetable oil, chili powder and Worcestershire sauce. Grill for 10 to 12 minutes or until lightly charred and softened. Cool and chop. Reserve.
Meanwhile, place potatoes in a pot and cover with salted water. Bring to a boil. Reduce heat to medium and simmer for 20 minutes or until potatoes are cooked. Drain potatoes and return to the pot.
Add cheese, milk and reserved onions; smash into potatoes using a potato masher or a large fork. Season with salt and pepper if necessary. Serve immediately. Makes 6 servings.

For a tasty and colourful kick, stir a handful of corn kernels and 2 chopped green onions into the smashed potatoes

For a lighter alternative, reduce the cheese by half and mash with non-fat sour cream.
